The unsuspecting goldfish in this video gets placed in liquid nitrogen and flash frozen for a few seconds. Then he is quickly dropped into a beaker filled with water and seems to come back to life. The goldfish survived being frozen due to a phenomenon called the Leidenfrost effect.
The Leidenfrost effect is a phenomenon in which a liquid, (in this case liquid nitrogen), contacts with a surface that is significantly hotter than the liquid's boiling point, producing an insulating vapor layer. This thin layer of vapor prevents the fish from suffering any ill effects for a short amount of time. Once it's dropped back into the water, it quickly recovers looking somewhat shocked from the sudden change in environment.
